It would be very helpful for performance and health monitoring if the production Embedly proxy found here:

https://embedly-proxy.services.mozilla.com/

sent its nginx logs to Kibana.  There is no PII information in the nginx logs with respect to users histories.  The information I'm looking for is request method, path, response code, timing.
