Steps to reproduce:

Not sure if the attached print dialogue has something at all to do with Thunderbird. If not, please sorry. 

I am wondering whether it would be possible to define a page range that goes from, example, page 2 until the end. 

The problem with printing from emails is that I don't know in advance how many pages the printed document will have. Hence, I cannot say, example, page 2-11 (assuming 11 is the last page).

The print dialogue (of course) comes from Mozilla core. As far as I know, no other office application has "print to end", but you can always enter 999.

FTR, Word has a much superior way of printing individual pages, page ranges, pages in sections, and combinations thereof, by allowing the user to specify such in a single (!) text field. Even Window's default print dialogue is more advanced than Mozilla's (but then, page ranges are disabled e.g. in Notepad). In Word, there's no explicit "print to end", but you can actually enter 2- and it'll just do the right thing, to print from page 2 to the end.
