This is the conventional shortcut for this action, and muscle memory suggests that this was the previous standard in Mozilla until it was changed to C-k

Yes, it was changed to CTRL+K as in most office software packages and the release notes say so: https://www.mozilla.org/en-US/thunderbird/52.0/releasenotes/ The keyboard shortcut to insert hyperlinks into a compose window was changed from CTRL+L to CTRL+K to align with Office applications
