I think the behavior should be the opposite: A blank field selects everything. There are two reasons for this: (1) People will end up with blank folders less often, and thus may find themselves wondering if there was an error less often, and (2) more importantly, the inclusive behavior would be consistent with other search features, including those found elsewhere in Thunderbird.
