First thing I'd like to thank you for this great software, I write emails in three languages mainly, changing language for spell checking in firefox is really simple, right click -> languages -> choose. This task is rather complicated in Thunderbird, especially if you switch language frequently.
I know there are extensions, like Dictionary Switcher (language accessibility is not that straight forward there though), but I think this should be handled by default in the program without forcing you to download an extension, also because extensions might become incompatible amongst versions.

Reproducible: Always

Steps to Reproduce:
1.Write an email in english, spell checking is ok as it language was set to "english"
2. Write another email in another language, words are underlined in red, you need to go to: Options, spellchecker, language, change, close.
3. Write another email in english, you have to go trough all step 2 again.
I do right click, languages -> and choose my language. so what you are asking for is already there.
And I use Mozilla/5.0 (Macintosh; Intel Mac OS X 10.5; rv:5.0) Gecko/20110525 Thunderbird/3.3a4pre
