Details
Any time that autocomplete thinks that it's smarter than me, and fills in the URL
bar with the rest of a URL, I should be able to Undo (Command-Z) and go back to
where I was. That currently does not work.

Ctrl-Z is reserved for undoing your regular typing actions. Like Jesse said,
delete should work for the purposes you are seeking.
