It was suggested in bug 1021309 to use the -moz-os-version instead of our existing -mac-foo-theme metrics since we now have three separate mac metrics, which could be condensed into -moz-os-version.
FYI, I just filed bug 1060941 in which I propose to also make it possible to detect the OS itself with media queries. That's not so much needed in our already-forked-and-spread-with-ugly-ifdefing default theme stuff, but it would be quite helpful for add-ons.
