Details
I'd like to see the camera app allow for various "profiles" for the user to choose. For instance: MMS (limit file-size, small resolution, low bitrate) Low Quality (current default settings) Medium Quality (current resolution, higher audio/video bitrate) High Quality (current resolution [or higher if device allows], higher video bitrate, Opus audio codec or WAMR)

This already exists, but is disabled by default. You can enable it by modifying config.js[1] to uncomment 'recorderProfiles'. 1. https://github.com/mozilla-b2g/gaia/blob/master/apps/camera/js/config/config.js#L365

Mike, Why are these hidden? Will these make their way into the UI as standard? I strongly believe that they should be user-facing.

Can this only be changed pre-compile? I see no way to modify this on the device.
