I should be able to customize default chat font, as I am able to do so in emails.
I've searched in about:config, there are no options allowing me to do it.

Is the expectation here to be able to change the font that's actually sent as part of the message or just the font displayed in Thunderbird?

I'd say it's the font displayed in Thunderbird.

Hmmm, I think Instantbird had it's own default font setting here (which is why it didn't honor Thunderbird's), but no UI was ever hooked up to that.
Anyway, seems like we should use what's in Display > Fonts & Colors > Default font?
