User Agent: Mozilla/5.0 (X11; Linux i686; rv:31.0) Gecko/20100101 Firefox/31.0 Iceweasel/31.5.0
Build ID: 20150225055253

Steps to reproduce:

This is icedove 31.4.0, hope that's ok!

Select DejaVuSansSerif font, tick 'allow messages to use other fonts'.

Actual results:

It keeps popping back to 'sans-serif'.

Expected results:

I would like to be able to use the font I select. With each message I have to reselect DejaVu. I would also like to force DejaVu for all incoming messages, however to do that I must untick 'allow messages to use other fonts' BUT that makes it impossible for me to use any font other than sans-serif at all. Can I please have the font I select as my default as my default and not have it keep trying to go back to sans-serif?

Best would be TB38beta :) We have some fixes in the fonts handling in compose window.

You select this in Preferences?

What do you mean? Where did it "pop back" ? In which window are you in and how can you determine it is not your wanted font?

That seems to be correct. This is a font for displaying received messages.

You say the font is wrong when composing a message?

Actually, the final fix for the "sans-serif" issue is still awaiting (review and) landing: Bug 1148330
Thanks for looking at this guys. Sounds like Jorg K understands the issue, so I won't clarify further. It sounds like it should be a simple enough thing to fix, but maybe not.
Thanks for the credit, but I'm not usually on Linux, although I booted up my Linux box to check out the crazy sans-serif and serif issues.

Once the patches land, you should try a daily version so see whether it addresses your problem.
