Details
STR:
1) Open Firefox Dev Edition (v41)
2) Customize, switch to default theme (Australis rounded tabs).
2) Open devtools (they are still dark theme). Go to settings pane, switch to Light Theme.
3) Restart browser
Observed:
Browser theme has switched back to dev theme (square tabs).

I'm thinking this is a duplicate of Bug 1164954, in that the switching to the Default from customize mode doesn't actually end up setting the selected theme ID value. If this is the same problem, then you will probably see both 'Default' and 'Developer Edition' showing up as selected in the dropdown from within customize mode.
A workaround is to go to about:addons -> Appearance and disable the DE theme from there. Or, first select the DE theme from the Customize Mode dropdown and then select the Default theme. That should make everything work as expected.
I've got a patch that fixes it over in that bug but have been waiting for review for a while. I'll nag over there to see if we can get a fix landed.
