To avoid generating thousands of emails, were we to go and change each existing bug in the old product/component to the new product/component in the BMO UI, would it be possible to change it in the DB?

yes - we have tools that allow us to move components between products (which shifts all their bugs in a single step).

Also remove the old components once the bugs are moved over (per bug 1220909).
