I think Apple mail may support DNS SRV records a la https://tools.ietf.org/html/rfc6186 which is likely sufficient for your configuration purposes.

I did read that as well, but a wireshark dump of my ipad traffic while adding an imap account does not show such a thing. It just connects to some appple, google!? and edgecast servers (everything is TLS so no sure what it's doing there).  Besides, I actually did set up rfc6186 records but those are being ignored by ios.
