Mozilla Firefox recreate empty "Extensions" folder under "C:\Users\WindowsAccountName\AppData\Roaming\Mozilla" after installation and after each update.
There is no need for that.

This is not the installer or the updater... neither of these create these directories or touch the profile since there can be multiple profiles for a user and other users so neither try to manage them since they don't always have access.

Why is this a problem? It seems like it'd be more confusing to change it at this point.

It's just a clean request to remove the useless bloat.
Folder located in "C:\Users\WindowsAccountName\AppData\Roaming\Mozilla\Extensions" doesn't store any folders and files, so there's no need to recreate it every time after installation and after each update.
