Currently the statsd configuration is set to the defaults which works well for running in docker. But if you want to set, for example, `STATSD_HOST=other.host` you can't. It's not taking effect.
Merged https://github.com/mozilla/tecken/commit/74c243e16b955d3c028d203987730a2478ebe260 (not sure why this bug didn't auto-resolve)
