We need to not only apply security patches but also non-security patches from time to time on our hosts, so that they are maintained in a relatively current state. For RHEL/CentOS, I encourage tracking the point release updates when they occur (6.1, 6.2, 6.3, 6.4) every few months. For non-RHEL/CentOS packages from third-party repos, some repeating schedule of "look for pending upgrades and consider how to respond to them" on a per-repo basis would be valuable.
