I tried to reproduce this issue using:
 Fx 56.0
 Fx 56.0.1
 Fx 56.0.2

Across the following platforms:
 Windows 10 x64
 Ubuntu 14.04 LTS x64
 macOS X 10.12.2 

Some of the tested scenarios were:
 -disabling the updates from about:preferences
 -installing some addons (10+, always different as I did not have any information regarding the user's addons)
 -restarting the browser and going to about:firefox
 -changing the time from the OS and restarting the browser a few times

I could not reproduce this issue, any thoughts on what I missed?

Yes, long story short, it did not update to Fx 57.
Looks like they have something special on their system then...

There isn't enough to go on for this bug so resolving as incomplete. If this is still the case with the latest Firefox please either comment in this bug and I'll reopen it or you can file a new bug. Thanks!
