We currently have language names in toolkit https://searchfox.org/mozilla-central/source/toolkit/locales/en-US/chrome/global/languageNames.properties I believe that language names used for the language switcher in Firefox for Android are coming from the OS, which leads to inconsistent results, and some of our shipping languages showing up only with the locale code. In the future we might try to build/get this list from CLDR, but the idea is that we'll still have an internal source for this information, and we should use it instead of relying on the OS.
