User Agent: Mozilla/5.0 (Macintosh; Intel Mac OS X 10_14_2) AppleWebKit/605.1.15 (KHTML, like Gecko) Version/12.0.2 Safari/605.1.15 Steps to reproduce: TAG > Manage Tags > (select color) > Edit... > (click on color to edit) > (change color) macOS beta version 65.0b1 Actual results: TAG menu drop-down shows all edited colors as BLACK, messages list does not change color, and message highlight is lost entirely. Expected results: TAM menu drop-down should reflect the new edited color, messages list should change color accordingly, and message highlight should be present.
Just tested changing color, reproducing the issue, then changing the color exactly back to the default/original color, and the color does not return. Seems any edit permanently loses the color.

I can confirm this using 65.0b1 on Linux Mint 19 using a test profile. Select a message. Select Tags from the Mail Toolbar. Select New tag. Create a tag named Respond, with Red: 255, Green:255 and Blue: 0. Select Tags from the Mail Toolbar and it is Black. They are all the correct color when I look at Preferences > Display > Tabs and change when edited. It is only Tags from the Mail toolbar showing the problem.
