Steps to reproduce:
When I reply to a message, often but not always the content of the message I reply to is mostly cut off / removed, for no apparent reason since it's just text that is removed (but images as well if these are present). I just tried to create a screenshot, but currently the problem does not occur... I had this in previous Betas too, seems to pop up once in a while...

Could this be related to the standard email signature delimiter?

Hard to say without the actual message. You can attach eml file of draft reply or the original to the bug report.
