As mentioned in bug 1523688 comment 21, I think it makes sense to explicit add them even if our C++ code can figure out all of these without them.
The reason is that on Linux we delegate all of them to fontconfig, but Linux users like to customize things, and they may want to specifically change how Firefox works regarding the font selection. Bug 1523688 is an example of that.
It could be disgusting if we ask users to set something in about:config which doesn't exist at all.
