When benchmarking it would be useful to turn off MOZ_PICKLE_SENTINEL_CHECKING to reduce its potential performance impact.

We can use the current #ifdef to control the default behaviour when the build flag isn't passed. Once we add this build flag, we can add an entry to https://developer.mozilla.org/en-US/docs/Mozilla/Benchmarking based on using the build flag.
