Once the code for using Elasticsearch 6.x has landed we ship this to Dockerhub/Jenkins etc and upon deploying this we need to create a new elastic.co instance to point to, change our ES_URLS env var, and lastly execute the reindex command.

The execute plan of this will/might require some communication orchestration since the site search is likely to break whilst we wait for the re-indexing.
