1582818 - profile_date being overwritten for some clients in core_client_last_seen for iOS

While trying to identify the profile creation date for some iOS clients, I noticed there were instances where this variable is seemingly overwritten with a different date (8.1% of iOS clients in a random sample of from 2019).

Hello,

The Mozilla Data Engineering organization is currently going through our extensive backlog, consisting of hundreds of issues stretching back for nearly 10 years.
