I currently see two dictionaries listed. Which one should be used?

My guess would be
https://addons.mozilla.org/firefox/addon/valencian-catalan-dictionary/

For background, this dictionary will be downloaded automatically if someone switches languages from Preferences in Beta/Release.
Talking about dictionaries, I might also need some help in bug 1492792

Your guess is correct, it must be used https://addons.mozilla.org/firefox/addon/valencian-catalan-dictionary/
This include the language specific forms defined by AVL (http://www.avl.gva.es/) which by the Spanish laws is the competent in standardizing our language
The other one is based in RACV norms (http://racv.es) which is a private organization with it's own ideas about the standardization of the language
