Actually, we change a lot of build system change to use custom GV on our products such as Reference Browser. To use custom GV, you add the following to local.properties instead of editing build.gradle.

dependencySubstitutions.geckoviewTopsrcdir=/path/to/mozilla-central/
dependencySubstitutions.geckoviewTopobjdir=/path/to/mozilla-central/objdir
