Steps to reproduce:
Cloudflare went down today (Oct. 16) so DNS over HTTPS got broken. But when I unchecked the DNS over HTTS option in Firefox, so that I could browse again, the option kept rechecking itself. Yes, the uncheck would not "stick" and kept turning itself back on. So FF would not work when Cloudflare was down. On multiple systems, both Mac and Windows. Definite code bug.

Were you not able to browse during this time?
Did you set any preferences in about:config?

Pending any info from the reporter, this sounds like a problem in the rollout addon?
Unchecking the box in about:preferences should not be overridden by the addon.
No. I could not browse anymore. Because Cloudflare was down, so their DNS was too. Hence Firefox could not browse.
And it happened on all computers with FF DoH, and on both Windows and macOS Catalina.
That is the point of the bug report. And the only reason why I tried to uncheck the DoH box. Hoping that would fix FF. But the FF DoH check box kept rechecking itself, even after i cleared it multiple times.
After many many many tries it sometimes cleared itself and stayed that way, but still no browsing.
I changed nothing today in About:Config. But I had changed a few minor things months ago. Nothing major.
FYI, I had to totally reinstall FF and make a new profile (after saving my session so i could reload and get all my tabs back!) to be able to use FF again.

But how can I get to you the problematic profile when I installed a new profile.
Is the old profile still there somewhere?
How can I find it and send it to you?

You can go to about:profiles in your new profile. It will list all the profiles you have. Identify the old profile and click "Launch profile in new browser". This will open a new window with the old profile, from there you can load about:support and send us the output.
