Steps to reproduce:
Compose a message in plain text format, or view a message received in plain text format.
Actual results:
As of the most recent update a few days ago (to 68.3.1), the default fonts in plain-text composition and message windows default to a tiny size. I tried Tools->Options->Display and set the plain text font size to "larger", but it had no effect.
Expected results:
The default font size should not have been changed by the update, or changing the font size under Tools->Options should have increased the font size.

I'm seeing this same issue since updating to 68.3.1 on Win10 today. It seems like the default zoom level for message text has been made smaller, and zooming in one click takes it back to what I'm used to. Looks like this might be a duplicate of Bug 1577561.

You're on the right track. You mean, you clicked the "Advanced" button, right? You need to change the size for both "Latin" and "Other writing systems" to cover messages encoded in the most common encodings for "western" use.

Just set up a new profile to see whether the problem persists there: Start Thunderbird with -p or use about:profiles in "Help > Troubleshooting Information". I doubt it.

The problem goes away in a fresh profile.
One of the servers I use is a private one and in the past it has been difficult to get Thunderbird to access it in a fresh profile. But this time I managed it, so I guess the problem was solved by creating a new profile.

You might want to try to find out what was wrong with the old profile. It must be some preference causing this.

The point is, I didn't change any preferences. The profile was somehow altered when Thunderbird updated itself. This is on one of my desktops. On my laptop, I don't seem to have had a problem.
