Currently we only set automation to handle beta channel. In order to start publishing to the stable channel (and implicitly to Flathub's UI) we need to amend automation to take into account these as well.

I think we only need to touch SOPS for this, as the values are already amended in cloudops-infra.

I've amended SOPS with this. I don't think we need anything else.
