When clicking on an extension's icon in the toolbar, the dropdown that would normally open is not visible if the extension is on my external monitor, but it works fine if I move Firefox to my laptop's built in monitor.
This is not specific to any particular extension, and also occurs with the user account status (the avatar in the toolbar). I was not able to reproduce this with a fresh profile, but it is very reliable on my main profile. It doesn't appear to matter which monitor I start Firefox on.
I'm using Wayland, and the two monitors have different scaling factors, which has been a problem in the past. However, that is true in the fresh profile as well.

Any errors in the browser console when this happens?
If you disable popup autohide in the browser toolbox and inspect the panel that's being shown (but isn't visible), where is it?
FWIW, I expect this is related to bug 1605353 and some of the discussion there, and I must confess I do not understand how wayland works here. AIUI we don't have enough information to be able to reliably open popups at a particular point on the screen, or something.

A few days later and I can't reproduce this bug. I tried downloading a nightly build from when I filed the bug, but that didn't work either. I suspect that a combination of upgrading packages on my system, restarting, and updating Nightly has "fixed' this issue. I'll try those debugging steps if this occurs again.
