In bug 1581126 we added Linux support for touchpad pinch gestures behind a pref, apz.gtk.touchpad_pinch.enabled.

This bug tracks enabling this pref by default. The main piece of remaining work is to add automated tests, which will happen in bug 1640186.

With latest GTK3 this should now also work on X11 assuming Xinput2 is used, see https://gitlab.gnome.org/GNOME/gtk/-/merge_requests/4212
