Using privacy.resistfingerprinting appears to interfere with dark theme styling using a GTK dark theme on some system pages (notably, about:newtab), as well as extension tooltips.
I imagine that by design resistfingerprinting is supposed to prevent sending theming information to websites, however it shouldn't really work like that on system pages. It is probably something that depends on the referenced bug which used to affect all Linux users. If I disable privacy.resistfingerprinting, dark mode on about:newtab works properly.
I wonder if we should also use -moz-toolbar-prefers-color-scheme
from bug 1701691 for about:newtab?

This issue also occurs on Windows with a High Contrast Black theme enabled. I was able to reproduce this issue in Firefox 88, Beta 89.0b2 and Nightly 90.0a1 (2021-04-21).

This is really more of a dupe of 1450398 - We should abide by the user's preference on system pages but we currently don't. That's a bug we should fix.
