Details

User Agent: Mozilla/5.0 (Windows NT 10.0; Win64; x64; rv:78.0) Gecko/20100101 Firefox/78.0

Steps to reproduce:

I tried to remove "Google" in the line called "browser.newtabpage.activity-stream.improvesearch.topSiteSearchShortcuts.havePinned" in about:config.

See screenshot here:

Actual results:

It was removed for a moment, but a few minutes later the entry is back and Google is pinned again

Expected results:

The field should have remained empty

T, thanks for taking the time to report this issue. I don't think the preference that you are mentioning it's suppose to remove a top site pin. To do that, go to a New Tab page, hover the mouse over the site that you want to remove, click on the ... (Open menu) and select Unpin. Restart Firefox and if Google is still there click again on ... (Open menu) and select Dismiss.

For the time being, I'm going to set this to Resolved Invalid, T, please reopen if the above indications do not solve your problem.
