This page talks about clicking the hamburger button on Thunderbird "and select Preferences":

Meanwhile, there is no PREFERENCES button. However, there are "account SETTINGS" and "OPTIONS". This made me realize there is a problem of terminology in the app.
On thunderbird alone there are two terms (settings/options) which are practically synonymous and are used for two different things. Adding "account" before "settings" does not make it crystal clear. On top of this, the config help page I linked talks about "preferences", a third synonym that is not used on thunderbird that I can see.
Expected results:
Suggestions:
Change "account settings" to "accounts."
Change "options" to "Thunderbird Settings."
Change "Customize" to "Appearance", and bundle the current settings inside "customize" with theme choice. There's a paintbrush as icon for "Customize" yet ironically I can't change the theme from there.
Check for instances of preferences/settings/options in help docs, and change to appropriate terminology.

I'm marking this as an enhancement, but it borders on defect due to mediocre design.

It used to be Preferences on Mac/linux, and Options on Windows.
On daily, it's now actually Settings everywhere.
But we don't track support.mozilla.org content fixes in bugzilla.
