We currently have instructions about stripping the quarantine attribute here:
https://firefox-source-docs.mozilla.org/tools/try/index.html#resolving-try-build-is-damaged-and-can-t-be-opened-error

However, on my M1 Mac, this doesn't seem to be enough to be able to run arm64 builds from the regular build jobs. Instead, the only way I've been able to run an arm64 try build was to trigger the "repackage" job and download the target.dmg from it.

I have some suggested tweaks to the documentation.
