In the address book, if the user has a gmail email address then their is an Instant Messaging field added such as gtalk:chat?jid=someemail

I believe this is erroneous, the fact that one has an id on a chat system does not in any way suggest that its an appropriate way to send them a message. In fact I don't think I've got any contacts at all that use gtalk as their preferred instant messenger.

Providing a made-up instant message address can easily lead to messages getting lost.

Well, Gtalk doesn't actually exist anymore, so no-op.
I don't think we're adding the IM address for new things you add. That data is just shown this way now, IF the data existed in the old addressbook instant messaging fields.

Looks like you are right about it only being in older records, so I'll close this for now.
