I went to the global search (burger menu, tools, seach messages.
I wondered why I didn't see a way to search in the message body.
Then I found the following support question:
https://support.mozilla.org/en-US/questions/1370101
which explains why.
Suggestion:
If the sync feature is turned off (and the dialog decides to NOT offer searching in the body), then add a notice somewhere on that search screen, that explains why.
For example: "Searching in the message text requires that you enable Message Synchronizing in Account Settings."

Note, this search is a standard search, not global search.
But as described in bug 1818065, "body" search is not made available if message sync has been disabled.
I tested beta - body search for an account is not offered when I disable message sync in account settings.

That would be indeed very useful. I made the same suggestion in comment#7 of bug 1818065 together with a complementary companion enhancement that would go hand in hand with yours:
When the
bodyfield is unavailable, it might be better to display it grayed out rather than hiding it, so that users don't think it's a bug.
Ideally Thunderbird would also tell users somewhere, why the field is unavailable and what they must change to make it available.
Better yet: a grayed-out body field with a yellow exclamation mark traffic sign, which - when hovered - displays your explanation in a tooltip.
