Steps to reproduce:
Update to new version
Actual results:
Fonts are too small. All actions i tried within the support forum to get the old font size has not worked. Colors are too similar. you cant often compare a button to an entry. Toolbar ist switched with main menu. above emails are some button you cant change and some important are missing.
Expected results:
all of the above should work

Do I understand correctly that the only place you were not able to increase the font size is the email message? That font size is partly controlled in Settings > Display > Fonts and Colors, and partly controlled by the message content.
In the email message itself and all the folders content. like posteingsang, gesendet, etc.

Font size should impact both message display and message list. Size is set in the app menu ≡.
What sizes have tried ?
All available in that scale. from 9 to 30

I know about no change for the font size in messages since TB 102.
Try to increase the font size in "Settings > General > Fonts & Colors > Advanced..." or in German "Einstellungen > Allgemein > Schriftarten und Farben > Erweitert..." and then select "Other Writing Systems" or "Andere Schreibweisen" and change the size. A re-selection of the message is needed to see a size change. If this doesn't happens then try "Latin" or "Lateinisch". It's a bit complicated with the many writing systems in this dialog but this two writing systems I noted are the most used in our region.
This is what i tried first, as it was mentioned in the support forum. But didnt change anything.

It would be helpful to understand what is going on if those with a 'bug' could post this info:
In Thunderbird
- Help > Troubleshooting Information
- scroll down to 'Important Modified Preferences'
- Copy all lines that start with 'font.' and paste info into this bug report.
