Why can't I update older versions of Firefox not in one go to the current version?

Steps to reproduce:

When I am trying to update an older version (several releases behind the current version), I almost always first get another older version of Firefox, not the current one.

Actual results:

The process of updating Firefox from an several releases old version to the current version doesn't happen in one go, I have to start the update process several times.

Expected results:

Even if I have a very old version of Firefox (like 109) it should update to the current version of Firefox immediately, not step by step!

The Bugbug bot thinks this bug should belong to the 'Toolkit::Application Update' component, and is moving the bug to that component. Please correct in case you think the bot is wrong.

Component: Untriaged → Application Update
Product: Firefox → Toolkit

In general, we try to do exactly this. But, there are two caveats:

First, if we have already downloaded an update and a newer update becomes available, we might not download the newer update until the already downloaded one is installed. We are hoping to fix this eventually but, unfortunately, we need to fix Bug 1480452 first. We are working on making progress on it, but it's slow.

Second, sometimes it is important to the update process that Firefox update to a certain version before it updates further. One example of when this might happen is if update process itself changes and we need the new updater in order to successfully install later versions. The version that Firefox must update to before continuing the update process is called a Watershed. We try very hard to keep watersheds to a minimum. Trust me when I say that we don't like it any more than you do. But sometimes they can't be avoided.

Since the example version that you mention updating from is 109 on macOS and 109.0.1 is a watershed on macOS, I believe that you probably encountered the latter situation.
