On Windows11, there should be a way to "opt-out" of the Windows' "taskbar preview" feature, which is enabled by default on Windows and applies to all applications

Use Win11
Start Firefox.
DISABLE the "Show tab previews in the Windows taskbar" setting
Hover mouse over the Firefox icon on the taskbar
AR: the preview of the current tab is shown on the taskbar
ER: I'd rather not
This kinda seems like a privacy exposing feature of Win11. I wonder if Firefox can have a way to "opt-out" of this.

That pref is just the equivalent of selecting "Show an image preview when you hover on a tab" from about:preferences.
Irrespective of this setting, Win11 will show a taskbar preview of the active tab.
Setting disabled: If you have multiple tabs open, only the tab in the foreground will be shown. If a video is being played in he active tab, the video will play in the preview
Setting enabled: If multiple tabs are open, the preview will show all the tabs. IFf a video is playing in a tab, the preview will only show a static snapshot of the playing video
