I recently bought a much bigger monitor and happily took advantage of the
greater resolution in a number of programs. When I compose email, however, the
font size for my plaintext messages remains very small. Looked through all the
preferences and also looked through about:config but couldn't find out a way to
sepecify that the display font for the plaintext email composition window should
be of a much larger size.

preferences -> appearance -> fonts -> monospace WFM. The default on Linux is
very small, 12px IIRC.
