I have two SMTP accounts. When switching betweem them, the unsent mail keeps
trying sending through their original SMTP server.

Reproducible: Always
Steps to Reproduce:
1.In Advanced outgoing server (SMTP) settings, set up two servers.
2.Compose mail and select "Send later"
3.In Advanced outgoing server (SMTP) settings, set the other server as default.
4.Try "Send unsent messages".

Actual Results:  
The message sends through the original default server.

Expected Results:  
The message sends through the newly default-selected server.

It is necessary to restart Mozilla for the SMTP default server change to take
effect.

I can't reproduce this, sending unsent messages after switching the assigned
SMTP server uses the new one.

Normally I'd ask if you're sure you've selected "Always use default server" in
the Advanced Account Settings. But if you wouldn't, the new default wouldn't
change anything even after restarting Mozilla.
But maybe you should nevertheless have a look at this option.
Christian Eyrich is right. I had not configured the default SMTP for my identities.
