As far as I can tell the only way to poll the mail server to check for new mail
is by clicking the "Get mail" icon in the toolbar. I'd certainly expect a menu
item for this (e.g. File > Get Mail) and preferably a keyboard shortcut as well.

Steps to Reproduce:
N/A
Right-click on the account for a Get New Messages menu item.

F5 -or- Ctrl-T  gets new messages for current account
Shift-Ctrl-T    gets new messages for all accounts
Summary: "Get mail" menu item and keyboard shortcut missing → Request "Get new messages" item on main menu

Oh yes. I wouldn't have guessed that, though: might still be worth considerering
adding menu items to File. I wouldn't be surprised if the majority of users only
use Thunderbird for one account: I pretty much do and tend to forget that an
account level exists in the left panel tree at all.

So they do. And it's in the help, too: oops!
Tbird 1.0, OSX 10.3.latest, File -> Get New Messages for -> Get All New Messages

shortcut is Command-Shift-T
