I find I'm forever accidentally activating drag-n-drop when moving between
folders via IMAP. 

i.e. I finish reading a folder, click on the next folder with unread mail, and
find my cursor has turned into a "page" icon - indicating it's grabbed something.

Now I just hit ESC and continue - but I just thought "I'm not mom and pop". I
may be fine in working around this glitch - but most of the world isn't me :-).

I don't use D-n-D much even in other apps, but I "feel" Thunderbird is somehow
being too sensitive over when to activate? Can that be changed?

It's not something I can replicate. If I start explicitly dragging a msg or
folder, the "page" icon I have representing I'm D-n-D'ing shows up, but if I let
go of the button, it disappears as it should.

The problem I have is that sometimes that D-n-D is activated, and letting go of
the button won't help - as I'm not holding any button down! At that stage I have
to hit ESC to make it go away. Once I followed through and clicked on another
folder, and Thunderbird asked me to confirm that I wanted to move all my mail!
So there really was a D-n-D event there.
