This is most definately a personal preference, but I find the quoting in the 
composer/viewer windows horrible.  I have followed the FAQ to remove the quote 
bars to get the ">" quoting style back, but Thunderbird doesn't use a space 
after the ">".  I find this style of quoting:

easier to read. 
 
As I mentioned, this is personal preference, after having used kmail and 
text-based email clients.

Amen. I'm having trouble finding any bug that describes a way for a user to set
their own quoted-body prefix string. Can anyone give me some clue?
