Mail can be stored in a folder by choosing Options > Send copy to or by setting
a default folder where a copy of the message should be placed in.

It would be nice if there was an option to override which folder the message
gets stored in without editing account preferences, that is a simple

[ Send ] Send message and store in the default folder as defined in the account
preferences

[ Send & File ] Send message and store in a chosen folder instead of the default
folder defined in the account preferences
