It would be nice to have freeform category entry so you dont have to go into 
settings, add any categories then go back into the event to set it.

This was suggested in bug 193013.

Nominating for WONTFIX.  There would be serious UI issues about how to cancel
the addition of a free-form category, once one was started, without canceling
the event creation.  There's also the fact that this would conflict with the
actual purpose of the 'New Event' dialog.  I think it's best to keep these sort
of things separate.

Why does there HAVE to be a fixed list of categories?
What about doing away with the list (or just keep it as a guide).
Dare I say it, like Outlook.

managing was improved recently and right you can add new category when you are editing existing or new event
Edit Event -> Category -> New Category... (last position)
