In evolution, I was used to mark sections of the mail containing code or log
output etc. and choosing Preformat. Even in Plain text mode, this made the
selected text non-wrapped.

Thunderbird cannot do this in text mails. 

Reproducible: Always

Steps to Reproduce:
1. Start composing a mail
2. Paste a section of log output or code > 72 chars in length per line
3. See how the text is messed up.

Bug 176903 is about HTML, this is not.

Bug 262475 is a dupe, but for MailNews. Are MailNews bugs applicable to Thunderbird?

Bug 186732 is about adding a button for wrapping/unwrapping (but the comments
include a offer of $100 for what I'm requesting!!).

I'd happily make it a dupe of 262475 if MailNews bug are considered for Thunderbird.

No, I don't think so, but bug 262475 is in the Core product and I believe that
means that fixing it would fix the bug in both Thunderbird and MailNews because
they share this (backend) part.

Yes, to my knowledge Thundebird bugs can/should be duped to MailNews Core bugs because of comment #3.
