There is no way to set a printer page size in the preferences.  about:config is
not a substitute for general users.  This is not just a cosmetic issue like most
preferences, it affects whether pages actually get printed or not (i.e. wrong
DocumentPageSize will result in unprinted files)

If you're talking about picking a paper size for each print job, you can click
on the "properties" button within the print dialog to access the paper size
selector.

If you're talking about supporting additional paper sizes besides those built
in, see bug 230220.
