The red boxes will not be visible in the mail when sent. I guess they're provided as an assistance in composition to allow editing of the headers. Most messages will actually not show the red box around the message, just the headers; but any HTML tables in the message will also be outlined in red. As for your "expected results": that form of header is only used for a reply, not for forwarding.
